Low carb meal prep! Made a big batch of homemade chicken soup + a couple of my fav proteins and veggies! This is only about 1/3 of the soup – Makes about 6 litres then I freeze it ?
◾Turkey Zucchini Meatballs – Combine 2 lbs extra lean ground turkey, 1 finely grated zucchini with excess water squeezed out, 1 large egg, 1/3 cup whole wheat panko bread crumbs, 2 cloves minced garlic, 1 tsp sea salt, 1/2 tsp black pepper, 1/2 tsp cumin & 1/2 tsp onion powder. Bake at 375 F for 15 to 20 mins or until they hit 165 F.

◾Shrimp Scampi – Sautee two 400 g bags raw peeled shrimp ) in frying pan with ghee or olive oil. Add pink Himalayan salt, garlic powder + red chilies to taste (I rarely measure) and juice of 1 lemon – Can also add a splash of white wine when simmering and then garnish with fresh parsley! The shrimp is great with zucchini noodles & parmesan cheese ? @jadeparker
