KEEPING YOUR FINGER ON THE PULSE (AKA LEGUMES)

Some of the common pulses/legumes include lentils, chickpeas, fava beans, lupin, kidney beans, black beans, etc.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Benefits of legumes are MANY and include
✔️High soluble and insoluble fibre content- helping with gut health and bowel function. Soluble fibre also helps to lower cholesterol.
✔️Antioxidant content – especially vitamin E, selenium, phenolic acids, phytic acids, copper, zinc and manganese.
✔️Some contain a compound called Soponins which have also been shown to lower cholesterol.
✔️Protein rich.
✔️They are low GI which means the carbohydrates in them are absorbed slowly helping with blood sugar control and satiety.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
✔️✔️Both canned and cooked from dry are healthy options. The draw backs of canned are that some heat sensitive nutrients are destroyed by heat in the canning process and some companies add salt to canned products- compare the sodium per 100g on the nutrient info to get a product with lowest salt. Canned are convenient and still very nutritious though. If you are cooking from dry then ensure legumes are cooked properly as undercooked legumes can cause stomach upset.
