PEANUT BUTTER COOKIE DOUGH QUEST BARS (GF, V option)

I know this is a weird time of year where you’re caught between treating yourself and indulging – and also trying to work out your goals for the new year.
My best advice is to just spend these days looking after yourself and treating yourself WELL with food that’s nourishing AND delicious ✌?

These DIY quest bars are the perfect snack to have on hand during this busy season, and to make sure you always have something ready that’s;
✅ packed full of natural, wholesome ingredients
✅ high in protein to keep you satisfied even when you’re on the go
✅ a source of the other 2 most important nutrients: peanut butter and chocolate. To keep your soul satisfied and your belly happy.

Again, I used whey for half the protein source in this recipe, just because it sticks really well with the wet ingredients to bind the dough. ? If you want a vegan version, just use 50g pea protein and add 1-2 tbsp of a sticky sweetener like rice malt or agave. If you don’t have the new Happy Way peanut butter protein (firstly question why, because it’s the best), use either vanilla or plain pea protein, or a powdered peanut butter.

Ingredients:
▪️25g @happywayau Peanut butter Pea protein powder
▪️25g @happywayau Vanilla whey protein powder
▪️50g runny almond butter (or nut butter of choice)
▪️20g coconut flour
▪️50ml almond milk
▪️20g dark chocolate, cut into chunks
▪️1 tsp natural sweetener

Method:
1️⃣In a mixing bowl, add your dry ingredients and stir to combine
2️⃣Pour in the almond milk and nut butter, and continue stirring.
3️⃣Fold through the chocolate chunks
4️⃣Using your hands, start to mould the mixture into a dough, and roll flat onto a piece of baking paper.
5️⃣Place your your protein dough in the freezer to set for up to an hour, before cutting into 6 bars. Keep chilled.
