PERFECT FOR XMAS- SAVE THIS PANZANELLA RECIPE!

• 4 slices sourdough (I used pumpkin sourdough) – cut into thick slices, roughly chopped. Brush with olive oil and and bake until crisp.
• 4 large tomatoes (can also use cherry tomatoes)- cut into wedges
• 1/8 of a red onion (or more to taste) – chopped finely
• 4 balls bocconcini- halved
• 1/2 cup fresh basil
• 2 Tablespoons extra virgin olive oil
• 2 Tablespoons balsamic vinegar
• Salt and pepper to taste
