Pesto pasta party over here 😎 Say that 5 times fast 😂 I kept calling this my Shrek meal just because the color of the green is so bright and kept giving me major Shrek vibes 😅 Probably NOT what to say to tell you it was also delicious but you know it is what it is 🤣 I didn’t even realize until I went to put the bowl together just how much green was in it! Green pesto, spinach, and Brussels 🤷🏼‍♀️ Safe to say I got my greens in today haha. But seriously this pesto was pretty easy and also so good! It’s avocado based and doesn’t have any oil in it! Also this meal is totally plant based if you live that lifestyle or like eating a plant based meal sometimes 💯 I adapted a few Pinterest recipes based on what I had on hand/ wanted to be able to make it in a blender (no food processor over here 🙁) I’ll post the recipe below 👇🏻 Paired it with @eatbanza chickpea pasta for some extra fiber and protein 👊🏻 It tastes pretty similar to regular pasta but has way more protein and fiber in it which I love! I’ve got a lot of extra pesto (this is one meal I know I won’t be able to get Eli to eat 😂) So send your favorite ways to use it up my way! I’m thinking on toast or pizza 😎 Have a wonderful evening guys! ❤️ ———————————————————————————- dinner details 👉🏻 Pesto pasta: 1 cup of basil, 1 cup spinach, 2 tbsp nutritional yeast, 1/2 avocado, 2 tsp garlic powder, 2 slices of lemon (originally wrote basil whoops 😂), and some water to thin it out (ended up using 6 tbsp). Blended it all up in my blender! Used @eatbanza chickpea pasta, sautéed spinach, broiled tomatoes, and leftover Brussels to pair with it
