Plant Based Paleo Nachos
Wishing I had a plate of these Plant Based Paleo Nachos to snack on on this football Sunday ? Sweet potato chips with allll the veggies + the easy cashew “cheese” I made last week ? Made this platter for Eli and I last week (he surprisingly likes the cashew cheese!) To thin it out a bit, I added a little of almond milk and made it thinner ?? I just need to bite the bullet and invest in a food processor ? Anyone have any good recommendations for a good quality but affordable (aka cheap haha) one?! I’ll post the cashew cheese recipe below and planning on adding it to my blog this evening during halftime ? ———————————————————————— We’ve had a day full of football + card playing over here! Soak 2 cups of cashews in water for at least 2 hours. Then rinse them. Add into the blender with 1 1/2 cup water + 1 tsp chili powder + 1 tsp onion powder + 1/2 tsp paprika + 1/4 cup nutritional yeast. Blend until smooth. Add more water if needed to thin it out! -⠀
Nachos Details:⠀
2-3 sweet potato sliced into rounds, coat with 2 tbsp avocado oil, baked at 450F for 25 mins (turn halfway). Peppers and onions baked at 450F for 15 mins with @primalpalate taco seasoning. Topped with avocado, jalapeños, and cilantro
