PUMPKIN SALAD [Serves 2]

If you’re stocking up on Pumpkins (AKA Squash for some) for Halloween then this salad recipe might come in handy.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients:
● 1.5 cup Pumpkin – cut into 2cm cubes
● 1 bunch Broccolini or 1⁄2 head Broccoli
● 1⁄2 cup cooked Buckwheat (approx 1⁄4 cup uncooked)
● 2 cups Rocket (AKA Argula)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Dressing:
● 3 Tbsp Orange Juice
● 3 tsp Seeded Mustard
● 1 tsp Extra Virgin Olive Oil
● 1 Spring Onion
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preparation:
1. Using baking paper, roast Pumpkin pieces at 180 degrees until cooked through (about 25 minutes)
2. Add the Broccolini/Broccoli to the oven tray for the final 10 minutes
3. At the same time, cook the Buckwheat according to the packet instructions
4. Combine Pumpkin, Broccolini/Broccoli, Buckwheat & Rocket.
5. Combine dressing ingredients – add to the salad & enjoy!
