SALADS FOR DAYS

Now that we’ve had 2 little babes join our household having healthy pre-made meals that last for a few days are going to to be a focus. Also good for those of you who meal prep or pre-make salads for lunches.

This roast veg and whole meal Cous Cous salad is what is currently in our fridge.
➡️ 8 cups roast veg (we used asparagus, red onion, pumpkin, pumpkin, capsicum, zucchini and eggplant)
➡️ 2 cups whole meal Cous Cous
➡️ 3/4 cup chopped coriander
➡️ 1/2 cup roasted nuts or seeds (we used slivered almonds and pine nuts)
➡️ Dressing made with 2 Tbsp Extra Virgin Olive Oil, 2 Tbsp white wine vinegar, 1 Tbsp lemon juice, salt and pepper.
