Adding nuts to your breakfast is the perfect way to get extra in at the start of your day!!
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients.
• 2 tablespoons mixed nuts (I used walnuts and almonds)
• 1 cup mixed fresh or frozen berries
• 1 egg – whisked
• 1 thick piece of wholegrain bread
• Cinnamon
• 1tsp extra virgin olive oil
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method.
1. Mix the egg and cinnamon together in a bowl.
2. Dip the bread in the egg mix making sure each side is well covered
3. Heat the oil over medium heat
4. Cook the bread on both sides until the egg is cooked
5. In the meantime, mix the berries, nuts and a bit of extra cinnamon
6. Top the bread with the berry and nut mix and serve
