Simple Saturday morning breakfast


Simple Saturday morning breakfast 🤗 Leftover roasted delicata squash (I am squash obsessed right now but this one is my FAV) + mashed avo + two fried eggs 👌🏻 Sometimes Saturdays call for pancakes/ some big fun breakfast or sometimes you just want the basics 😎 I’m telling you- if you haven’t tried a delicata squash get your hands on one ASAP!! I cooked it yesterday- I sprinkled this with a little cinnamon and roasted it for 35 mins and then his morning I ate an entire squash… 😳 They’re pretty tiny but still a ton of squash for one person 😂 I didn’t heat it up this morning but you easily could broil it for a few mins or toss it in the microwave 👌🏻I got my eggs super crispy by heating the pan for a few minutes before adding the eggs 🙌🏻 When the pan is already hot- I feel like it makes the eggs crispier 💯 Taking it easy this morning with a cup of coffee, getting a morning run in at some point, and just taking a breather! This week has been full of really high highs and really low lows so I just need a chill morning to rejuvenate! It’s Eli and I’s anniversary but he’s busy with school stuff all day so I’m taking some time to clean and maybe hit up Target for a little dollar bin action 😉 Haha happy Saturday friends!! ———————————————————————————- breakfast details 👉🏻 2 eggs fried in avocado oil with red pepper flakes + roasted delicata squash (sliced in half, pulled out the seeds, then sliced into thin half moons and baked at 400F for 35 mins with cinnamon sprinkled on top) + 1/2 mashed avocado ❤️
