Tofu scramble recipe
Tofu scramble…
As you probably know by now I do ❤️ my tofu…
This was so good that I had to share it with you.
You could have it on toast or have it for lunch or dinner.
I had it in the morning on toast then I had it at night again… ?
You will need:
200g Firm tofu drained and crumbled
1 Small sweet potato cubed
½ Onion chopped
2 Cups of Kale
Spices:
½ tsp salt
¼ tsp garlic powder
¼ turmeric
1 tsp cumin
1. Place the sweet potato cubes in a large skillet, and cover with water. Bring to a boil, then reduce the heat to medium and simmer three minutes. Pour out all the water.
2. Lightly spray with olive oil and add oil and onions. Sauté on medium-high heat for seven minutes. Add the crumbled tofu, garlic powder, cumin, salt, and turmeric. Cook for five or so minutes on medium heat, stirring frequently.
3. Add the kale, top the skillet with a lid, lower the heat to simmer, and allow to steam for a few minutes or until the kale is tender.
Serve on Toast or on its own…
