You can never go wrong with a classic ??♀️ Especially if it’s a HEALTHY CAESAR SALAD ? Caesar salad will never get old for me ?? But I have a hard time finding healthy dressing that actually tastes good so I made my own! And it’s AMAZING! It tastes like the real deal without using eggs or mayo ?? Hope you all have the best Fridayyyy?? ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀
Ingredients:
– romaine hearts
– @granarolousa—these are like cheese croutons!
– rotisserie chicken
– Parmesan—optional, for topping
Caesar salad dressing:
– 3/4 cup @traderjoes Greek yogurt
– 3 tablespoons olive oil
– 1 garlic clove minced
– 2 anchovies—I got mine from @traderjoes
– 2 tablespoons lemon juice
– 1 tsp Dijon mustard
– 1/3 cup pecorino romano—you can use traditional Parmesan but I just like this kind better!
– 1 tablespoon water to loosen it—optional ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀
Directions:
– rinse romaine hearts and cut
– for the dressing, all all ingredients to a blender and blend until smooth, add water after if you want a looser consistency
– add romaine, granarolos, rotisserie chicken, Parmesan, and dressing to a bowl, top with pepper
