Nagaimo stir fry – Chinese yam ‘山药’?
Happy Hump day, friends?. Have any of you guys tried this tuber before? Check my highlights to see some pictures of this. It is a long light brown skin tuber with hairy roots.☺️Fresh nagaimo is pure white inside, the texture is slippery with crunchy and a tad sweet like jicama. It can be eaten raw or cooked and boast lots of health benefits. After it’s grated, this gooey white goo is the main binder for making Okonomiyaki too?. You will see this tuber in a lot of Asian cooking as well.
FYI: Since it’s slippery, please handle with care when peeling the skin off.
Recipe (serves 2-3)
Ingredients:
~ 1 small tuber of nagaimo, use a peeler/knife to remove the skin, and carefully cut into matchstick
~ 1/2 cup celery stick
~ 1/4 cup matchstick carrots
~ 1/4 cup toasted cashew
~ 2 teaspoons chopped garlic
~ 1 teaspoon @leekumkeeusa stir fry sauce
~ dash of soy sauce, salt to taste
~ oil
✔️In a heated pan with 2 teaspoons oil, saute garlic until fragrant, add carrots, celery and continue to stir for 1min (I like my celery crunchy, you may cook longer if you wish). Then, add in nagaimo, stir fry sauce, dash of soy sauce and mix until combined. Season accordingly with more salt if needed. Serve warm with your favorite grain.
