Stir fry sambal veggie medley? – 四大天王
Happy Tuesday, friends.?One of the most common dish to order at a restaurant here, this stir fry usually has 4 types of veggies. Most commonly used veggies include: bitter bean (petai – my fav?), long beans/french beans, eggplant (brinjal), okra/winged beans (bengis). They are then stir fried in sambal sauce. See below for other veggies combination. Bitter bean is not at all bitter, it does have a distinct flavor though that I love. Thank you to my mama? for her help & guidance on how to make this dish. ?
Recipe (yields 2-3 servings)
Ingredients:
~ 1 medium eggplant, cut into match stick & shallow pan fry until light purple (mom’s method)*
~ 1/4 cup of petai (sub with asparagus)
~ 1/2 cup of chopped french beans
~ 1/2 cup of thick sliced okra (green & red one, optional)
~ 1 tablespoon sambal
~ 2 teaspoons soy sauce
~ handful of curry leaves
~ oil, salt to taste
✔️In a big wok with about 6 cups of boiling water, blanch the other 3 veggies until they turn into a darker green (about 3-4 mins). Mom added veggies in this order: french beans, petai & okra.
✔️In a heated pan with 2 teaspoons oil, sauté sambal for few seconds & add all green veggies in, stir continuously. Then, add eggplant & cook until well combined. Season with salt to your preference & add the soy sauce last along with curry leaves. Give it a final toss to before serving with warm rice.

*Eggplant can also be steamed until cook as another method to cook, but it will be a bit softer than this shallow fry
+Red okra changes to green once boiled, and it’s more crunchy than normal greens
