Spinach fried rice with pine nuts, anyone??
Happy Hump day, friends?. Sharing a simple fried rice recipe that I usually make for my kids’ lunch. Flavorful and delicious, this dish is the easiest way to add greens to your meal.
Recipe (yields 2-3 servings)
Ingredients:
~ 2 cups of cooked Jasmine rice (used @lotusfoods brand)
~ 2 cups fresh spinach (more for a greener rice)
~ 1/2 cup fresh corn kernel
~ 1/4 cup lightly toasted pine nuts
~ 1 teaspoon soy sauce/coconut amino/tamari
~ salt to taste, sesame seeds, white pepper
~ oil, toasted sesame oil, chili for garnish
✔️Blend spinach with a little water until you get a fine paste (enough water to keep the blender going, I used hand blender).
✔️Pour spinach mixture in a heated non-stick pan (water will start to separate from the paste). Stir continuously until most water has evaporated.
✔️Push to the side of the pan. Drizzle 1 teaspoon of oil, and sauté corn kernel and rice. Then, continue to cook while mixing the rice with spinach mixture until well combined. ✔️Season with soy sauce, dash of white pepper and salt. Finally, mix in pine nuts, garnish with sesame seeds and a drizzle of toasted sesame oil and chili, if using. Serve warm with your favorite protein.
