10 minute Peach Salsa
10 minute Peach Salsa ???
{Super fast + delicious on top of grilled chicken or fish!
Just in time for the #Weekend }
Ingredients:
2 ripe peaches, diced
2-3 medium Roma tomatoes, chopped
1 cup raw organic corn kernels, I used fresh local sweet corn, and chopped right off the cob (yes! corn can be eaten raw!)
1 small red onion, chopped
a small bunch of fresh cilantro or parsley leaves, chopped
1 clove garlic, minced
juice and zest of one fresh lime
sea salt and pepper, to your taste
Instructions:
Gently combine all ingredients.
Refrigerate for up to 3 days and stir just before serving.
