Chicken Veggie Roll-Ups
{Weekend Grilling Idea!} From my friend, & awesome trainer: Dominique @FlashFitTraining
For each serving:
1 Chicken Breast
1 Slice of fresh uncured ham
(No Nitrates added)
Fresh Asparagus
Red and Green Bell Peppers
Mushrooms
Red Onion
Any other veggies you love
Lemon pepper & garlic seasonings are my fave!
Line chicken breasts with uncured ham.
Roll veggies in chicken.
Hold together with toothpicks(soak in water for 20 minutes prior). Season with your favorite seasoning (I used lemon pepper & garlic ).
Throw on a med-high grill, turning once or twice, until chicken is cooked through & juices run clear.
TIP: Pound chicken thin first. This will make it easier to roll and will help it cook through quicker – more evenly.
