Cilanto-Lime Burrito Bowls
Who wants some!?!? .

Makes 4 servings
For the Salad:
6 cups Chopped crisp red leaf lettuce
2 cups Brown rice
1 ear organic corn (grilled)
1 cup organic grape tomatoes (chopped)
1 avocado (diced)
2-3 grilled lime-cumin rubbed chicken breasts
1 bunch cilantro leaves, chopped
Cilantro Avocado Lime Dressing:
1 ripe Haas avocado
3 Tbsp nonfat plain Greek yogurt
4 Tbsp fresh cilantro leaves
4 tsp fresh lime juice
1 tsp raw honey
4-6 Tbsp cold water (to desired consistency)
1/4 tsp sea salt
Puree all of the dressing ingredients in a mini food processor or blender. Adjust seasoning to taste. Drizzle & enjoy!
