Deconstructed Sushi Bowls??

makes 2 bowls/servings
Ingredients:
1 cup brown rice
6-8 ounces raw wild caught shrimp, peeled and deveined
1 Tbsp coconut oil
salt and pepper to taste
4 Tbsp light-sodium soy sauce, or coconut aminos
1 Tbsp sesame seeds
2 cups chopped raw vegetables such as:
red cabbage,
carrots,
cucumber,
green onions,
and avocado.
Instructions:
In a pan with lid add the brown rice and 2 cups of water.
Bring it to the boil, then simmer covered for about 15 minutes.
Preheat a non stick pan over medium high heat. Once hot,add coconut oil and shrimp, Season with salt and pepper to taste and cook for 3-4 minutes until the shrimp turns pink.
To assembly the bowls, place the rice on the bottom. Then layer the chopped vegetables and shrimp. Pour 2 Tbsp soy sauce per bowl and sprinkle with sesame seeds.
