Fresh Italian Chopped Salad🍅⁣
{Just. Can’t. Get. Enough.}⁣

makes 6 servings ⁣



Ingredients:⁣
2 medium avocados, diced ⁣
2 English cucumbers, sliced evenly ⁣
6 tomatoes on vine, sliced⁣
1 medium red onion, sliced ⁣
1 cup mozzarella pearls ⁣
2 Tbsp extra virgin olive oil, or avocado oil ⁣
3-4 Tbsp fresh lemon juice ⁣
1 Tbsp dry Italian seasoning ⁣
sea salt and pepper, to your taste ⁣
Fresh dill weed, or parsley for garnish ⁣


Instructions:⁣
Whisk oil, lemon juice, and Italian seasonings in a small glass bowl to make a dressing.⁣

In a separate large bowl, gently add all the chopped veggies, and mozzarella.⁣
Drizzle with the dressing, season with sea salt and pepper, then gently toss.⁣
Garnish with fresh dill or parsley.⁣
