What I did:
Brown 1 lb grass fed beef on medium high heat (or use Turkey) with 1 small diced onion.
Drain the grease very well.
Add:
1/4 cup water,
1, 7 oz can fire roasted, diced green chilies.
2 cloves garlic minced,
A good sprinkle of cumin, sea salt & freshly ground black pepper to taste.
Let simmer, stirring constantly for about 5 minutes.
Then add:
1 orange bell pepper, diced
15 oz cooked/rinsed pinto beans
15 oz cooked/rinsed black beans
Kernels cut from one corn on the cob
Heat through, stirring for several more minutes,
Then add:
1 cup sliced grape tomatoes
1 cup diced avocado
Sprinkle of green onions {Serve on fresh lettuce with salsa, and/or with non-gmo corn chips}
Fast food!
