{NEW} 20 minute Mexican-Style Casserole ?
{ One-pan meals are a busy persons saving grace! This ‘casserole’ comes together really fast using a few basic ingredients you probably already have on hand! The flavors blend together while it bakes in the oven for a few minutes…so it tastes like you spent a lot more time on dinner than you actually did! Serve with a side salad, OR use this Mexican inspired casserole as a salad topping! }
makes about 4 servings
Ingredients:
1 lb. lean ground turkey, or grass fed beef
2 tsps avocado oil, or extra virgin olive oil
1 large white onion, diced
2 fresh garlic cloves, minced or pressed
1 tsp cumin
1/4 tsp chili powder, or to taste
1 tsp ground coriander
1 tsp smoked paprika
15 ounces black beans, rinsed and drained
1.5 cups frozen organic corn, thawed a bit
15 ounce jar diced tomatoes, with juice
1/4 cup shredded cheese (optional)
a handful of fresh cilantro leaves, chopped
1-2 jalapenos, sliced
Instructions:
Preheat your oven to 350 degrees f.
Heat oil in a large oven-safe skillet over medium high heat.
Add onions and sauté until softens, about 3 minutes. Then, add in minced garlic, ground turkey and all spices, and cook for 5-6 minutes, breaking the meat as you go.
Gently stir in the beans, corn, and diced tomatoes including juice, then sprinkle with cheese.
Place in your preheated oven and bake for 10-12 minutes, or until cheese is melted and bubbly.
Carefully remove from the oven…the whlle pan including the handle is HOT!
Garnish with fresh chopped cilantro and jalapeño slices. Enjoy! ❤Rachel
