{A SIMPLE recipe to warm up those bellies o…


{new} Baked Cod in Tomatoes & Olives
{A SIMPLE recipe to warm up those bellies over the weekend}
makes 3-4 servings

Ingredients:
1 lb. cod fillets
1 Tbsp avocado oil, or extra virgin olive oil
3 small fresh garlic cloves, minced
1 small yellow onion, finely chopped
1 red chili, and finely chopped
2 small sweet peppers, chopped
1/3 cup green olives
1 15oz. jar fire roasted tomatoes
sea salt and fresh cracked pepper, to taste
1 Tbsp high quality balsamic vinegar
a small bunch of fresh chopped parsley leaves

Instructions:
Preheat the oven to 375 degrees f.
Heat the oil in a cast iron (oven safe) skillet, then add onion, sweet peppers, garlic, and chili and saute for about 5 minutes, until the veggies
soften a bit.
Add the tomatoes, olives, balsamic vinegar and season with salt and pepper to your taste.
Cover and simmer for 5 minutes, then add the cod fillets, nestling them evenly into the sauce.
Cook in the preheated oven for 12-15 minutes, or until fish is cooked through and flakes easily.
Garnish with fresh chopped parsley and enjoy!
