{NEW} Fresh Christmas Salad with Homemade Orange Honey Dressing ?
{ It’s easy to fill up on heavy foods this time of year…they are everywhere! It’s almost surprising when someone brings a fresh, bright salad to a Christmas party!

makes about 4 servings
Ingredients:
6 cups baby spinach
1 cup pomegranate seeds, from 1 large, fresh pomegranate
1 large orange, peeled and sliced
4 celery stalks, thinly sliced
1/4 cup sliced almonds
For the orange dressing:
Juice from one fresh orange
2 Tbsps apple cider vinegar
2 Tbsps olive oil
1 Tbsp raw honey
1 small shallot, minced
sea salt and fresh ground black pepper, to taste (about 1/4 teaspoon each)
Instructions:
Combine all dressing ingredients into a small mason jar, place the lid on and shake well to emulsify.
Add all the salad ingredients nicely to a large bowl or platter.
Pour dressing over just before serving and toss gently to combine.
