.
Makes 6 servings
Ingredients:
2 Tbsps avocado oil, extra-virgin olive oil
1 medium yellow onion, diced
6 fresh garlic cloves, thinly sliced
1/2 cup organic tomato sauce
1.5 tsps smoked paprika
sea salt and freshly ground black pepper, to taste
1 cup broth (vegetable, organic chicken, or beef)
2 Tbsp red wine vinegar
4 (3/4-pound) bunches washed lacinato kale , thick stems cut out, leaves cut into thick strips (about 14 packed cups total)

Instructions:
Place a large pot or Dutch oven over medium-high heat and add oil. Once hot, add onions and garlic and stir until they begin to turn translucent, about 5 minutes.
Add tomato sauce and smoked paprika, broth and vinegar.
Reduce heat to medium and bring to a boil.
Add the kale, cover, and cook for a minute or two, until it begins to wilt.
Stir well to combine and simmer until tender, for about 25 minutes.
Season with sea salt and pepper if needed and enjoy!
