makes about 4-5 servings
Ingredients:
2 lbs fresh green beans, ends trimmed (not frozen…but freshest possible)
2 Tbsp clarified butter, or ghee
1 large onion, peeled and thinly sliced
2 fresh garlic cloves, minced or pressed
2 Tbsp fresh squeezed lemon juice
2 Tbsp sliced almonds
Instructions:
Bring a large pot of salted water to the boil. Add fresh beans cook for 3-4 minutes until tender but still very firm. Drain and immedietly rinse under very cold water, or an ice bath. This stops the cooking process.
Melt butter in a large pan over medium high heat. Add in the onions and sauté until soft and golden, about 3-4 minutes. Add garlic and cook for 1 minute more, until fragrant.
Add the green beans, and sauté stirring constantly, for an additional 2 minutes.
Remove from heat, and squeeze lemon juice over and sprinkle with almond flakes.
Enjoy!
