{NEW} Quinoa Tabbouleh Salad
Gorgeous, Nutritious salad idea for your holiday table! ?
{ This salad is very easy to make and absolutely delicious! From crisp cucumber, sweet tomatoes, fresh lemon. and bright parsley, every bite is a tasty surprise. It’s a vegetarian salad that is loaded with flavors and texture. Quinoa makes this salad a good source of protein and fiber too!

I like to divide this into 1/2 cup – 1 cup portions for future meals.

Excellent for Food Prepping, or Lunches on-the-go, as it’s delicious served cold, or at room temperature.

Ingredients:
8 cups COOKED quinoa ( I cook my quinoa according to the package measurements, but I use broth instead of water, and add 1 tsp olive oil to the pot while simmering. Cook until just done, remove from heat, fluff with fork, then cover and chill in the fridge while chopping all of the herbs and vegetables )

For The Dressing:
1/2 cup fresh squeezed lemon
1/2 cup high quality olive oil
2 cloves fresh garlic, minced
2 tsps sea salt
1/2 tsp black pepper

For the Tabbouleh:
1.5 cups packed fresh parsley leaves, chopped very fine
4 Tbsps fresh dill, chopped
2 Tbsps fresh mint leaves, chopped
2 cups cherry tomatoes, halved
1 small red onion diced small
2 large English cucumbers, diced very small
4 green onions, sliced thin, both white and green parts

Instructions:
Chill COOKED quinoa in the fridge, as it’s best room-temperature or cold.

Once ready to assemble salad; fluff quinoa with a fork and place it in a very large salad bowl.

Meanwhile, prep your dressing by whisking all dressing ingredients in a small glass bowl. Set it aside.

To assemble the quinoa tabbouleh: 
Gently place all chopped tabbouleh ingredients in the bowl with the cooked quinoa.

Drizzle salad with the dressing. Give it a gentle toss.

Taste for any seasoning adjustments and serve immediately. ❤Rachel
