{NEW} Rachel’s Garden Ripened Cherry Tomato Salad ??
As a young girl I’d often take the salt shaker out to the garden and enjoy a full belly of fresh-from-the-vine, still warm from the sun, tomatoes.
What wonderful memories of Summertime!
This year we have a plethora of garden tomatoes planted, including lots of cherry tomatoes, so that our children can enjoy those same experiences.
Any tomatoes left on the vines will be made into this EXTREMELY SIMPLE, but don’t let it fool you, *COMPLETELY DELICIOUS*, Tomato Salad.
If you didn’t plant your own this year, the Farmer’s Market’s are also a great place to grab some vine ripened, local tomatoes.
Make this ahead of time for your BBQ’S and get-togethers!
makes about 4 servings
Ingredients:
1 quart cherry or grape tomatoes, halved
1/4 cup extra virgin olive oil
3 Tbsps apple cider vinegar, or white vinegar
1/2 tsp sea salt/Himalayan salt
1 tsp raw honey, or pure maple syrup
1/4 cup minced fresh parsley leaves
1-2 Tbsps minced fresh basil leaves
2 tsps minced fresh oregano leaves pulled from stems
Instructions:
Place tomatoes in a glass bowl.
In another small bowl, whisk oil, vinegar, sea salt and raw honey until blended, then stir in your fresh herbs.
Pour this dressing over tomatoes
Very gently toss to coat.
Allow to sit and marinate for at least an hour before serving.
OR
Refrigerate, covered, overnight.
