{New} Summertime Greens with Sprouts, & Sunflower Seeds + Delicious Homemade Balsamic Vinaigrette Dressing ?
What’s for lunch? Here’s some inspiration for you, along with a favorite homemade balsamic vinaigrette recipe too!
{We love this salad…there is just something about sprouts and sunflower seeds that make a salad extra good!} .
Salad Ingredients Serves 4
6 cups mixed greens
1/2 cup purple cabbage, shredded
1/2 cup cherry or grape tomatoes, halved
1 cucumber, chopped
1/2 cup alfalfa sprouts
1/2 cup chickpeas, rinsed and drained
1/3 cup fresh organic corn, cut off the cob (yes, you can eat raw corn without cooking! Choose local, high quality, fresh sweet corn.)
1/3 cup red onion, sliced
1/4 cup goat cheese, or feta cheese crumbled
2 Tbsps sunflower seeds
Salad Instructions: Arrange ingredients nicely on as large platter, or toss all ingredients in a large bowl.
Ingredients for delicious tangy homemade Balsamic Vinaigrette:
1/2 cup extra virgin olive oil
1/4 cup high quality balsamic vinegar
1 tsp raw honey
1 tsp Dijon mustard
1 fresh shallot, minced
1 clove fresh garlic, minced
sea salt and ground black pepper to taste, about 1/4 tsp. each
Dressing Instructions:
Whisk oil, vinegar, honey, Dijon mustard, shallot, garlic, sea salt, and pepper in a glass bowl until very well combined.
Alternately, place all ingredients in a lided glass jar, and shake vigorously until totally combined.
Keeps well, sealed and refrigerated for a week.
Simply set out to let warm a bit, and shake or whisk well again before serving.
Serving size for dressing is 2 Tbsps
