makes about 3-4 servings
1 Tbsp avocado oil, or olive oil
1 medium yellow onion, diced
2 fresh garlic cloves, pressed
1 lb. grass fed ground beef
15-oz. canelinni beans, black beans, or favorite beans of choice
1.5 cups organic, frozen corn

1 Tbsp Taco Seasoning
1.5 cup water, or bone broth
Garnish ideas:
sliced green onions, for garnish
fresh chopped cilantro or parsley, for garnish
diced avocado
diced tomatoes
lime wedges

Heat oil in a large stock pot over medium heat. Add onion and cook until soft, 4-5 minutes, then add garlic and cook for an additional 1 minute. Add in ground beef and cook until no longer pink.
Drain grease, if any.
Add beans, corn, fire-roasted tomatoes, taco seasoning, and water/broth.
Simmer on low, covered for 15 minutes or so.
Garnish with cilantro/parsley and green onions.
