Shrimp + Cobb Jar Salad 🌱
{Prep several of these Jar Salads, and eat well this week!}
makes 1 serving
Ingredients:
large mason jar
2 Tbsp chopped avocado
8 grape tomatoes
1 Tbsp red onion, chopped
2 Tbsp chopped cucumber
1 cup of romaine lettuce and baby spinach mix
1-2 Tbsp crumbled feta, or blue cheese
6-8 cooked shrimp
1 boiled egg, chopped
Yogurt lime dressing:
2 Tbsp plain Greek yogurt
1 Tbsp lime juice
1/4 tsp fresh squeezed lime zest
sea salt and pepper to your taste
1 Tbsp extra virgin olive or avocado oil
Instructions:
1. In a small glass bowl, whisk all the dressing ingredients.
2. Layer all items in order starting with the dressing at the bottom – going up, then seal with the lid.
3. You can store the salad jars in the fridge for up to 3 days.
**tip be sure all of your veggies are completely dry – any moisture will quickly decrease freshness.
