Spicy Shrimp Burrito Bowls

{These shrimp bowls pack in the FLAVOR + GREAT for Meal Prep???!!!} .
Makes 4 servings
Ingredients:
1 Tbsp chili powder
1 Tbsp cumin
½ tsp garlic powder
½ tsp cayenne pepper
1½ pounds shrimp
1/2 tsp sea salt
1 Tbsps coconut or olive oil
1 cups organic corn, (thawed if frozen)
½ red onion, diced
1.5 cups black beans, drained and rinsed
1 cup diced tomatoes (I used cherry)
1 lime, juiced
½ tsp garlic powder
For the rice:
1 1/2 cup brown rice
2 limes, juiced
⅓ cup chopped cilantro or parsley
Instructions:
Start by cooking the rice according to the package directions. Once the rice is done mix in the lime juice, cilantro/parsley and season with sea salt and pepper to taste.
In a medium sized bowl, combine the corn, black beans, red onion, tomatoes, lime juice and garlic powder.
Set aside.
In a large skillet over medium-high heat add 1 Tablespoon of oil. Add the shrimp, garlic powder, cumin, chili powder, salt and pepper. Stir-fry for about 3-5 minutes (depending on the size) until the shrimp and cooked through. Remove from heat.
To assemble the bowls layer rice, corn salsa and shrimp evenly between four bowls.
