Turkey + Zoodle Bolognese ?

makes 4 servings
Ingredients:
1 Tbsp avocado oil, or olive oil
2 carrots, diced very small
1 small red onion, diced
2 celery ribs, diced small
2 fresh garlic cloves, minced
1 pound ground turkey, lean
1 Tbsp oregano flakes
1 Tbsp smoked paprika
sea salt and pepper
1 24oz jar tomato sauce
4 large zucchinis
1/2 cup grated parmesan cheese, to garnish (optional)
Instructions:
Heat the oil a large skillet over medium-high heat. Add in the carrots, onion, and celery. Cook until the vegetables soften, then
add in the turkey meat.
Season the meat with oregano, smoked paprika, garlic, salt and pepper. Cook the meat until browned stirring constantly and
breaking it in small bites with a wooden spoon.
Pour the tomato sauce over the meat and veggie mixture and stir until combined. Simmer for about 10 minutes on low, to let the flavors to develop.
Meanwhile, make zucchini noodles using a spiralizer.
Divide the zoodles onto 4 plates, or meal prep containers, top with the turkey
meat sauce and garnish with parmesan cheese. You may keep it in the fridge for up to 4 days.
When ready to serve, just add the zoodles to a pan, and stir fry for
2 minutes, mixing well to get them all coated with the sauce.
