Cheesy corn fritters with a lemon pepper mayo dip! Corn fritters were the first recipe I learnt to cook when my mum gave me a cookbook when I was about 12. I was obsessed with them, they were so easy and tasty but obviously not vegan. It’s probably been over 15 years since I last had one and this vegan version take me right back and taste even better! They’re super quick to make, packed with vegan cheddar, spring onions and a bit of spice. Don’t forget the lemon pepper mayo which compliments them perfectly! ? #cornfritters
