CHEWY LEMON CHIA COOKIES 🍋 I can’t help but scream when it comes to lemon recipes… haha #ad These cookies couldn’t be any more simple to make and I used one of my favorite sweeteners—> Agave In The Raw (@InTheRaw). Agave In The Raw is an organic sweetener pressed from the core of the Blue Agave plant and it has a low glycemic index (meaning there’s a lower & slower rise in your blood glucose.) Lemon Chia Cookies:
1 1/2 cup almond flour
3 tbsp. coconut flour
1/2 tsp. baking powder
1 tbsp. chia seeds
1/4 cup coconut oil (melted)
1/4 cup Agave @InTheRaw
Juice from 1 whole lemon
⠀⠀⠀⠀⠀⠀⠀⠀⠀
DIRECTIONS:
1.) Preheat oven to 350F and spray/line a baking sheet.
2.) In a large bowl, whisk together the melted coconut oil, Agave In The Raw (@InTheRaw), and lemon juice.
3.) Once well combined, stir in the dry ingredients.
4.) Use a small spoon to make little dough balls (mine made 18 cookies), place them on the baking sheet and slightly press down.
5.) Bake for 9-10 minutes and let them cool for 1-2 minutes on the pan before moving to a cooling rack. {I put a little bit of lemon ice-cream in-between the cookies and stored them in the freezer!}
