had some ripeeeee bananas, so I made @amywilichowski ‘flourless peanut butter banana muffins’ and they turned out SO good & fluffy!! I swapped out PB for AB, and used @alterecosf salted almond dark chocolate ? I’ll leave the recipe below + tag the brands I used. happy thursday! || #hannahharvestinghealth
banana muffins:
i n g r e d i e n t s-
2 ripe bananas {mashed}
2 eggs
1 cup crunchy @barneybutter almond butter
1/4 cup @nutiva coconut sugar
2 tsp. vanilla extract
1 tsp. @simplyorganicfoods ceylon cinnamon
1/2 tsp. baking powder
1/4 tsp. Himalayan pink salt
@alterecosf chocolate chunks
d i r e c t i o n s-
1. preheat the oven to 375F.
2. whisk together the mashed banana, eggs, nut butter, coconut sugar, and vanilla extract until a uniform mixture has formed.
3. stir in the cinnamon, baking powder, and salt & fold in the chocolate chips/chunks.
4. fill greased or lined muffin cups 3/4 of the way full and bake for 25 minutes {or until a toothpick comes out clean.}
