✨Happy 2019✨ Just got back from a little spontaneous trip with the fam (my dad had off work so we took advantage and really enjoyed our time together!) It felt good to soak up time with them and not worry about posting ?? Taking time to be present is something I really need to do more often, so one of my goals this year is to take Sunday’s off the ‘gram—making some time for myself to read & reflect! I think it will be really good and will allow me to learn and grow a little more this year ? Anyways, I just made a quick snack and this combo did notttt disappoint ? Snack dEATs: I made @callascleaneats paleo English muffin & added cinnamon (recipe below), then sautéed some cinnamon pears, and ate it with some vanilla ice-cream cause why not ??
English muffin recipe:
2 tbsp. coconut flour
1 tbsp. ground flax (or 1 tbsp. extra coconut flour)
1/4 tsp. baking powder
1 egg
3 tbsp. water
dash of sea salt
(Optional) 1/2 tsp. cinnamon
Directions:
Lightly grease a mug, stir together all of the ingredients, microwave for 2 minutes, then cut in half/thirds (you can also toast it too!)
