Lemon cake for breakfast to start this Friday off on a good note ? I haven’t made this recipe in forever, so I thought, why not have it for breakfast ??♀️ It’s super simple to make and soo FLUFFY! I’m heading to my class soon, then to the airport to go to New York for the weekend with my mom and sis! Happy Friday Friends!! || #hannahharvestinghealth

Microwave Lemon Cake:
1 tbsp. coconut oil/ghee/or butter
1 egg
Juice from half a lemon
Zest from half a lemon
1 tbsp. agave/pure maple syrup
1/4 tsp. baking powder
3 tbsp. almond flour
2 tbsp. coconut flour
Directions: In a microwaveable mug or bowl, melt the coconut oil/ghee/or butter. Let it cool for a few seconds then use a fork to whisk in the egg, lemon juice, lemon zest, and agave/maple syrup. Stir in the dry ingredients and microwave for 2 minutes! Topped mine with @siggisdairy vanilla yogurt, @salbachia probiotic ground chia & white chia seeds, and pepitas!
