LEMON MUG CAKE ? || Ever since I made the banana bread in a mug, I’ve been wanting to try more simple recipes like that ?? I’m always craving something with lemon and this is such a great simple treat to satisfy that craving ??Just 2 minutes in the microwave and it literally has the most perfect texture ? I topped it with some fresh strawberries & unsweetened shredded coconut. Makes for a great breakfast, snack, or dessert! I hope you guys are having a great weekend and happy Sunday ? #hhhmugcakes •

SINGLE-SERVING MICROWAVE LEMON CAKE:
1 tbsp. coconut oil/ghee/butter
1 egg
Juice from half a lemon (2 tbsp.)
Zest from half a lemon
1 tbsp. agave (pure maple syrup works too!)
1/4 tsp. baking powder
3 tbsp. almond flour @bobsredmill
2 tbsp. coconut flour @bobsredmill
DIRECTIONS:
In a microwaveable mug, melt the coconut oil (about 20-30 seconds). Let it cool for a few seconds, then whisk in the egg, lemon juice, lemon zest, and maple syrup/honey. Stir in the dry ingredients and microwave for around 2 minutes & 15 seconds! •
