Loveeee stocking my fridge with grab-and-go snacks for the week and this ‘Blackberry Coconut Energy Balls’ recipe is one of my favorites! My original recipe has blueberries, but I’ve discovered that blackberries actually work a little better ?? They’re soft & chewy and SUPER easy to make! Blackberry Coconut Energy Balls:
1/2 cup plain yogurt (I used @siggisdairy )
1/2 cup coconut flour
2 tbsp. water
4-6 blackberries or raspberries (mashed)
1/4 cup vanilla protein powder (I used @bobsredmill )
Optional: 1 tsp. pure agave/honey
DIRECTIONS: Stir everything together, roll into balls, and store in the fridge for up to a week!
