My favorite sweet & savory breakfast 🍳🍌 I made my ‘single serving banana bread recipe’ into waffles and paired them with some scrambled eggs and avocado 🥑 I topped everything with some @freshjax seasonings, which I have been lovinggggg! I used the Maple Cinnamon seasoning on the waffles and the Toasted Onion seasoning on the avocado & eggs 😋 A big breakfast like this is my favorite because when I start my day with alllll the nutrients, I have so much energy throughout the day 🙌🏼 I hope you guys are having a great weekend, and happy Sunday 💛

SINGLE-SERVING BANANA BREAD:
1 tbsp. coconut oil (or butter)
1 egg
1 small ripe banana (mashed)
1/4 tsp. baking powder
3 tbsp. almond flour @anthonysgoods
1 tbsp. coconut flour @bobsredmill
1/2 tsp. cinnamon
1/4 tsp. vanilla extract
2 scoops @vitalproteins collagen (optional)
2 tbsp. chopped walnuts/chocolate chips (optional)
DIRECTIONS:
In a microwaveable bowl, melt the butter/coconut oil (about 20-30 seconds). Let it cool for a few seconds, then whisk in the egg and mashed banana. Stir in the rest of the ingredients and microwave for 2 minutes or make into waffles/pancakes!
