starting Sunday off with some warm blueberry banana bread ??It’s single serving, SO easy to make, and it totally melts in your mouth ? SINGLE-SERVING BLUEBERRY BANANA BREAD:
1 tbsp. coconut oil/butter/ghee
1 egg (you can use a flax egg, but the bread doesn’t set as much)
1 small ripe banana (mashed)
1/2 tsp. baking powder
3 tbsp. almond flour
1 tbsp. coconut flour
1/2 tsp. cinnamon
2-3 tbsp. blueberries
1 scoop @vitalproteins collagen (optional)
DIRECTIONS:
In a microwaveable mug, melt the coconut oil (about 20-30 seconds). Let it cool for a few seconds, then whisk in the egg and mashed banana. Stir in the dry ingredients, fold in the blueberries, and microwave for 2 1/2-3 minutes!
