These ‘lemon poppyseed energy balls’ are by far the best energy balls I’ve ever made 🤤🍋 They seriously have THE best texture and store perfectly in the freezer without getting hard as a rock 🙌🏼 I had every intention to make baked donuts with this batter, but the dough was just too perfect to not make these instead 😋 I hope you guys have a great Thursday! #hhhenergybites

Lemon Poppyseed Energy Balls:
1 1/4 cup almond flour
1/4 cup coconut flour
1/4 cup @livwell_nutrition vanilla bean plant protein powder (or any protein powder)
2 tbsp. poppyseeds (you can also use chia seeds)
1 tbsp. ground flax seed
1/4 cup honey (melted)
1/4 cup coconut oil (melted)
1/4 cup lemon juice (about 3 small lemons)
Zest of 1 lemon
3 tbsp. almond milk (or water)
DIRECTIONS: Whisk together the dry ingredients then stir in the wet ingredients. Roll dough into balls and keep them in the freezer!
