These ‘lemon poppyseed energy balls’ are by far the best energy balls I’ve ever made ?? They seriously have THE best texture and store perfectly in the freezer without getting hard as a rock ?? I had every intention to make baked donuts with this batter, but the dough was just too perfect to not make these instead ? I hope you guys have a great Thursday! #hhhenergybites

Lemon Poppyseed Energy Balls:
1 1/4 cup almond flour
1/4 cup coconut flour
1/4 cup @livwell_nutrition vanilla bean plant protein powder (or any protein powder)
2 tbsp. poppyseeds (you can also use chia seeds)
1 tbsp. ground flax seed
1/4 cup honey (melted)
1/4 cup coconut oil (melted)
1/4 cup lemon juice (about 3 small lemons)
Zest of 1 lemon
3 tbsp. almond milk (or water)
DIRECTIONS: Whisk together the dry ingredients then stir in the wet ingredients. Roll dough into balls and keep them in the freezer!
