This chewy pumpkin cookie recipe is my favorite to date (bold but truuuuu!) I seriously made so many batches last fall and am planning on doing the same this year hehe ? Happy Monday friends! || #HannahHarvestingHealth
Chewy Pumpkin Cookies:
1 1/2 cup oat flour (blend oats until you get a SUPER fine consistency; a food processor works well too!)
1 tsp @simplyorganicfoods pumpkin pie spice (or cinnamon)
1 tsp baking powder
1/4 cup @wholefoods pumpkin purée
1/4 cup @wholefoods unsweetened applesauce
1/4 cup agave or pure maple syrup
Topping: white chocolate chips
1.) Preheat oven to 350F and spray/line a baking sheet.
2.) In a medium sized bowl, whisk together the dry ingredients and in a small bowl whisk together the wet ingredients.
3.) Pour the wet into the dry, and stir until well combined.
4.) Allow the batter to sit for a few minutes (this allows the liquid really soak into the dry ingredients—making the batter a little thicker.)
5.) Use two spoons (or an ice cream scoop) to make 10 dough balls on a baking sheet, top with white chocolate, and bake for 8-10 minutes. Enjoy!
