Why am I just now making egg cups 🤔 probably because I was a little skeptical of how they would be in the morning after sitting in the fridge already cooked, but MAN they’re so good 🙌🏼 and super easy!! I saw them on @eatyourhe.art.out ‘s story and had to make them 😋 I already had some peppers cut up and so I sautéed those plus some spinach (you can also add onion) in coconut oil. You just whisk together 12 eggs with 1/4 cup water in a bowl, spray a muffin tin with coconut oil, pour the cooked veggies into the egg mixture, sprinkle with salt and pepper, and then pour it all equally into the cups at bake at 375F for 24 minutes!!!! I had two of these with some avocado and strawberries this morning for breakfast 🍳 ••••••••••••••••••••••••••••••••••••••••
