1. LEMON PAPRIKA GARLIC SHRIMP and DAIRY FREE SPINACH AND RICOTTA LASAGNA ROLL UPS with SPINACH WALNUT PESTO. These roll ups were SO EASY and SO DELICIOUS!⠀

1. Deets: @traderjoes wild shrimp seasoned with paprika, salt and garlic powder then sautéed in coconut oil and coconut aminos. After I cooked the shrimp I tossed them in a little lemon juice and olive oil. ROLL UPS: boil 4 @eatbanza lasagna noodles for about 6 minutes. Then spread a mixture of 1/2 cup of dairy free ricotta (I used @kitehillfoods), 1/2 teaspoon lemon juice, 1/4 teaspoon salt, dash of pepper mixed with some sautéed spinach. Then roll them up. Brushed with spinach walnut pesto. Served with some @lef_farms greens and lemon juice and Parmesan cheese.⠀

2. CREAMY TUSCAN BASIL GARLIC SHRIMP! Seriously so delicious…perhaps the best meal I’ve made in a while. Minimal ingredients, one pan (except for the pasta), and super full of flavor!⠀

2. Deets: sauté 1/2 cup diced onion, 2 cloves minced garlic, 1/4 cup chopped bell pepper in 2 teaspoons coconut oil over medium heat. After about 2 minutes add 1/2 pound of frozen wild shrimp, 1/3 cup chopped tomatoes, 1/4 cup chopped basil and cook for another 3-4 minutes. Add 1 cup full fat coconut milk, 1/2 teaspoon salt, 1/4 teaspoon pepper and 1 teaspoon coconut aminos. Bring to a boil and then reduce heat to medium low and allow to cook for another 5 minutes. If you’re serving with pasta, then add cooked pasta and toss. I added some steamed spinach and more chopped tomatoes.⠀
