These zucchini fritters are so easy to make, take less than 10 minutes to prepare and cook and are loaded with the goodness of real Whole Foods💚
2 x zucchini’s
20gm feta
20gm flour (I used sorghum flour)
1 x free range egg
What to do
Pre heat non stick pan with 1 tsp coconut oil. Grate zucchini and place into bowl with all other ingredients (I also added some psyllium at the last minute to increase the fibre content). Mix well and spoon small fritter size pieces into the pan. Allow to cook for approx 2 mins each side before pairing with a delicious salad.
