As much as I loved the food in NYC, filling up on groceries brought me even more joy.

I had an incredible time indulging in all the delicious food that New York City had to offer, but there was something truly special about preparing and cooking lunch in my own kitchen today. The satisfaction of filling up on fresh groceries and whipping up a nourishing meal was unmatched. Not to mention, the bowl of goodness I created was absolutely amazing! I loaded it with arugula, roasted mini peppers, a vibrant tomato and avocado salad, sautéed ground turkey and mushrooms seasoned with turmeric and lemon, some crunchy @sietefoods lime tortilla chips, and a heavenly creamy cauliflower and turkey bacon dill salad.

This cauliflower and turkey bacon dill salad was a game changer. It had all the flavors of a classic potato salad, but with a healthier twist using roasted cauliflower instead. To make the dressing, I combined @kitehillfoods almond milk yogurt, fresh lemon juice, coconut aminos, dill, mustard, salt, and pepper. The result was beyond delicious and packed with so much flavor. I can’t get over how much joy cooking and preparing nourishing meals brings me. There’s something truly special about being in my own kitchen, surrounded by fresh ingredients, and creating a meal that not only tastes amazing but also nourishes my body and soul. The process of chopping, sautéing, and mixing ingredients together is like therapy for me. It allows me to slow down, be present, and truly appreciate the food that I’m preparing.

Today’s lunch was a perfect example of this. I carefully selected each ingredient, taking the time to chop and prepare them with love and care. The vibrant colors and flavors of the arugula, peppers, tomato, avocado, turkey, mushrooms, and cauliflower came together beautifully in a symphony of tastes and textures. And that creamy dressing with the almond milk yogurt, lemon juice, and fresh herbs added a burst of brightness and tanginess to the dish.

As I sat down to enjoy my meal, I couldn’t help but savor each bite.
