Beginning the new week with Sweet Chilli and Lime Stir-Fried Veggies & ?. This is the simplest meal to make, but it is oh so delicious. I used frozen veggies for this, but you can use fresh vegetables if you prefer. Frozen vegetables are much cheaper and taste just as good – if you’re cooking on a budget that’s a tip ?.

What you need
150g mixed veggies (?, baby ?, snow peas)
100g?
3 tbsp edamame
3 tbsp sweet chilli sauce
Juice of 1 lime
1 tbsp sriracha
2 spring onions (scallions), sliced
1 large garlic clove, minced
1 red ?, chopped
Rice noodles, to serve

Directions
Heat a non-stick frying pan (with oil or non-stick spray if you prefer) add the spring onions, garlic and chilli and stir-fry for one minute. Add all of the veggies and continue to stir-fry for 4-5 minutes until they soften. Stir in the sweet chilli sauce, sriracha and the lime juice. Cook for a further minute then take the pan off the heat and serve over noodles. Sprinkle with sesame seeds and some lightly toasted peanuts if you wish. Enjoy.
