Being Nigerian Independence Day today, I know lots of Nigerians will be tucking into bowls of jollof rice or as my 5 year old calls it, orange rice, lol.

I had to represent so here’s my own bowl of Jollof rice with broccoli and barbecued tofu. This bowl is missing plantains, or else it would have been perfect!
